purchased for analysis. That the collection of so large a
number of samples was amply justified is evidenced by the
fact that no fewer than 44 (18'5 per cent.) were found to
be adulterated, while 10 others were certified to be of poor
quality. The necessity of maintaining a proper milk supply
cannot be too strongly insisted on, not only from public
health considerations, but from an economic point of view.
It has been estimated that the average consumption of milk
is 15 gallons yearly per head of population. At the average
rate of fourpence per quart this gives £1 as the expenditure
per head. Thus, in the St. Giles District, nearly
£40,000 per annum is spent upon this one article of food
alone.
