The amount of water added varied from 3 to 14 per
cent., and the fat was removed from 7 to 33.3 per cent.
In one case not only had water been added to the extent
of at least 4.3 per cent., but 15 per cent, of the milk-fat
had been removed.
BUTTER.
Of the 38 samples of butter examined only 1 was found
to be adulterated (2.7 per cent.) Gr 188 was certified
to contain at least 80 per cent, of foreign fat (fat other
