protect ion of meat from contamination in shops, on stalls and during
transit. There are 169 butchers' shops and 3 meat stalls in this
Borough.
it was necessary to serve 38 notices for breaches of the
Regulations.
Transport and Handling of Meat.
Since the passing of the Public Health (Meat) Regulations,
1924, groat advances have been made in the methods of handling
and transport of meat. In this Borough most of the cartage is
done under contract by licensed carriers. Greater care is now
exercised in matters of cleansing and loading the vans, and to
ensure that the contents are not folded by dirty sacking and straw,
as was so often the case prior to these Regulations. Improvement
in the type of vehicles used has not, however, advanced as might
have been expected. The typo of conveyance required for this
purpose is a van with a smooth, washable, impervious, internal
surface with rounded angles, similar in design to the cooling
chamber of a modern refrigerator. Overalls and cap are invariably
used by carriers when off-loading meat from their vans.
In some cases however it has been necessary to caution employees of
the retailors who have boon detailed to assist the off-loading for
neglecting to provide themselves with a proper head covering.
Tho general condition of the butchers' shops in this Borough
is satisfactory. The majority of the moat traders have provided
glass fronts to the premises and have also installed improved
fitments and furniture.
Refrigerators of the automatic type are rapidly displacing ice
boxes.
It is satisfactory t o record that the use of sawdust is diminishing,
but it is still too freely used on the floor of the shop and in the
refrigerator. Many butchers have discontinued its use, whilst others
are seriously considering falling into line.
In no instance during the year was unsound food seized by the
Food Inspector.

The total weight of meat surrendered and destroyed at the Council's Depot, Peckham Park Road, was 12 cwts. 2 qrs. 0¾ lbs.
