These figures show the great improvement in the quality of the milk
sold in Stepney during the last two or three years.
The average composition of all the samples of milk analysed, for each month
of the year, is shown in table G.

No samples were taken during August.
The figures are similar to those in the corresponding table of the report
for 1922.
The figures for the solids-not-fat are extremley steady, showing practically
no seasonal variation.
The figures for fat show the usual fall during the spring months and then
an increase until the highest fat occurs in October.
Table H gives particulars of the adulterated samples of milk.
