PUBLIC HEALTH (MILK AND CREAM) REGULATIONS, 1912 AND 1917.
During 1923, 252 samples of milk were examined under these regulations, and
all were found to be free from preservative.
Fourteen samples of cream (not preserved) were taken, four of which were
certified to contain boric acid, though not in excess of the amount permitted by
the regulations. Of these four samples, two informal and two formal samples were
purchased from the same two vendors respectively. The Sanitary Committee
were unable to accept the explanations offered by the vendors for non-compliance
with the requirements and proceedings were instituted resulting in a conviction
in each case.
Eleven samples of preserved cream were taken and found to comply with the
regulations as to labelling and the amount of preservative allowed.
In no instance did the fat content of preserved cream fall below 35 per cent.
No contravention of the other requirements relating to preserved cream were
found.
All the samples of cream and preserved cream were found to be free from
thickening substances.

afforded the opportunity of furnishing an explanation in writing. This explanation
and the circumstances were considered by the Sanitary Committee and a prosecution
was ordered. The penalty imposed was £15 15s. and £2 2s. Costs.

afforded an opportunity of furnishing an explanation in writing. This explanation
