has been in operation for some considerable time with very satisfactory
results. I am informed that the Metropolitan Asylums
Board have decided to extend this practice to each of their
Institutions.
30 samples have been procured in course of delivery at the
various railway stations in the Borough, only one of which proved
upon analysis to be adulterated. In this case the Public Health
'Committee did not consider the amount of adulteration sufficient
to warrant proceedings being taken.
Of the three samples taken at private premises, one proved to
be adulterated. The particulars of this case were as follows:-
A., a baker and confectioner in the Borough, was in the habit
of obtaining a considerable quantity of butter from a large wholesale
firm, for which he paid a good price. After being supplied
for a short period he found he could not obtain satisfactory results
with his pastry and endeavoured to ascertain the cause. His
suspicions were aroused, and he came to the conclusion that it was
due to the quality of the butter. The Inspector was called in and
arranged to procure a sample as it was delivered. This done it
was discovered that the article which was being delivered as butter
was really a mixture containing no less than 87 per cent, of
margarine.

The following Table gives the results of the analyses of the samples taken as above stated at the various Public Institutions, railway stations and private premises, and the percentage of adulterations in each case.
