Milk, Butter and Oleaginous Foods.—880 samples of these foods, a
list of which is set out in the Table below, were analysed by the Public
Analyst during the year, of which 98, or 11.1 per cent., were adulterated, as
compared with 10 per cent. in the preceding year.

Milk Adulteration.—595 samples of milk were submitted to the Public
Analyst, who reported that 539 were genuine and 56, or 9.4 per cent.,
adulterated. This percentage is higher than those which obtained in 1912 and
1913, and is 0.4 per cent. above the mean adulteration rate since 1892.
Milk adulteration is not pursued to the same extent as in former years, for
whereas in 1892 18 7 per cent. of the samples were adulterated, and in 1901
12 per cent. were sophisticated, in 1914, as stated, it was only 9 4 per cent.
This, of course, does not represent the actual amount of milk adulteration
in the borough, for there is no doubt that it is less than that mentioned because a
considerable number of the samples of milk which are taken to the Public
Analyst have been purchased from persons who have been strongly suspected
