Milk.—601 samples were submitted to the Public Analyst, of which
59, or 9.8 per cent., were adulterated. This percentage is slightly above that
of 1910, when it was 9.3, and is considerably above the figure for 1909, when
it was 6.9. The apparent increase in the adulteration is probably due to the
method of private sampling now adopted. Perhaps the better way to express
it would be to say the adulteration detected was 9.8 per cent.
