E. FOOD SUPPLY.
During 1911 visits have been paid to the various classes of business as follows:—

Twenty-four statutory notices were served and police-court proceedings
were taken in three instances (see above).
Restaurants.—Notices served dealt with—cleansing, 56 ; drainage,
11; defective cisterns, 7; w.c. defective, 7; w.c. dirty, 11; defective
ventilation of w.c., 3 ; improper position of w.c., 1 ; kitchens—refuse
bins uncovered, 8; defective flooring, 6; excessive heat, 3; improper
storage of food, 2; defective ventilation, 8; inlet to drain in larder;
unventilated gas stove?, 2 ; accumulation of refuse, 3; sleeping in
kitchen, 1; bedroom in direct communication with kitchen, 2; using
kitchen as a laundry and drying place.
A number of boarding-houses and private hotels were inspected, and
in several the sleeping accommodation for the servants was found to
be unsatisfactory.
Ice-cream Premises.—This commodity is made at 150 premises, each
of which was kept under supervision. In 19 instances defects affecting
this particular part of the business were remedied. The owner of
certain premises which were unfit for the purpose was called upon to
discontinue making or dealing in ice-creams at the premises until they
were made to comply with Section 42 General Powers Act, 1902.

Bakehouses.—At the end of 1910 there were 14 above-ground and
71 underground in use. During 1911 two underground bakehouses have
been closed, one voluntarily, the other on notice that it had become
structurally defective. All the bakehouses were inspected, and cleansing
carried out twice a year. One baker was warned that he was not keeping
