Adulterated Samples—Twenty of the official samples
were not satisfactory, and, therefore, the percentage of adulterated
articles amounted to 4.83 per cent., compared with 5.36
per cent, in the previous year. Of the 129 informal samples
seventeen, or 13.10 per cent., were found to be adulterated or
not up to standard.
MILK.
Two hundred and eighty-seven official samples of milk
were analysed during the year, and of this number fifteen, or
5.23 per cent, were certified as adulterated or below the standard
of the Board of Agriculture and Fisheries. The average composition
of all samples of milk analysed during the period under
review equalled 3.41 per cent, milk fat and 8.75 per cent, solids
not fat, while the average composition of the genuine samples
alone was 3.45 per cent, milk fat and 8.76 solids not fat.
All the milk samples were examined for the presence of
preservatives and in each instance a negative result was given.
