The samples grouped under the heading "Milk and Cream" were comprised as follows:—

Of the 45 samples of Milk found to be adulterated, 26 contained
extraneous water, 16 were deficient in fat, whilst three
were coloured with Annatto.
The one sample of Hot Milk submitted was reported against
as containing extraneous water.
Two samples of Separated Milk were coloured with Annatto.
whilst one contained extraneous water.
All the samples of Cream returned as adulterated contained
Boric Acid as a preservative, whilst the samples of Preserved
Cream reported against were found upon examination to contain
an excess of preservative above that declared upon the label.
Thus, the amount of adulteration reported in the case of the
Milk and Cream samples submitted was, for formal samples,
5.8 per cent.; for informal samples, 3.6 per cent.; and for all
samples, 9.8 per cent.
