The figures shown in the above table are interesting. It will be seen
that there is a steady decline in the Fat and Total Solids from January to
June, after which the rise commences, reaching the peak figure in November;
after this month the percentage again decreases. Except for the April and
May figures for Total Solids the sequence in Fat and Total Solids is unbroken.
The Solids.not.fat figures are rather erratic in the late spring and summer
months ; the highest figure, however, is shown in November and December,
and the lowest in April.
The milk supplied in the Borough is richest in November and poorest
in the late spring months. The average composition is, however, too low
and compares unfavourably with the composition of the milk supplied in
other parts of the country.

In 1932 a series of samples was taken from a number of wholesalers in
the Borough, further samples being taken on the same day at the various
points of distribution of the milk by the wholesaler. It was found in these
cases that the milk was not subjected to any "toning" during distribution,
but that in the supply to one wholesaler the milk was richer than that usually
examined in the laboratory, while in four cases the milk was of the same or
inferior composition to the average milk sold in Stepney for the corresponding
month of the year. One sample was adulterated and several samples were
of doubtful character, but no "poor quality" samples were obtained. The
investigation would appear to show that the low composition of the Stepney
milk is due to the fact that the wholesaler does not in the first place purchase
good quality milk.
