C- SAMPLING ; CHEMICAL : (Fat and total solids)
During the latter part of the year It was decided that In
addition to the bacteriological examination of Ice cream, samples
should also be taken for chemical examination.
Thirty one samples were taken for this purpose and submitted
to the Public Analyst for analysis, Two samples from a local
producer failed to show a 5% fat content, but a follow up sample
contained 5,3% of fat.
