Milk.
As in past years much attention has been given to
the milk supply of the District, no fewer than 246 samples
of this article having been submitted for analysis. Of these
15 were found to be of poor quality, only just escaping
classification as adulterated samples by a narrow margin.
Vendors of such fluids have, I understand, received special
attention.
Twenty-six samples were found to be adulterated either
by the addition of water or by the removal of fat. The
percentage of adulteration compares very favourably with
that of the preceding year, the figures being 10.8 and 18.5
respectively.

The nature and amount of the adulteration in each case are as follows:—
