Ice Cream.

Of thirteen samples of ice cream submitted for bacteriological examination, 10 were subjected to the Methylene Blue reduction test with the following results:-

The figures in parenthesis show the totals for 1955.
The respective Local Authorities were notified of the two unsatisfactory
samples (Grade III) manufactured outside the Borough. Three
samples were examined in connection with cases of suspected food
poisoning and were found to be satisfactory.
Although there are 29 premises in the Borough registered for the
manufacture of ice cream, only two premises were used for this purpose
during the year. These were inspected from time to time under the
Ice Cream (Heat Treatment) Regulations, 1947-1952, and the thermometer
readings checked. No contravention of the regulations was found.
Imported Egg Products.
Quantities of Chinese dried and crystalline egg albumen, whole-egg
powder and frozen liquid whole-egg are imported into this country.
Frozen liquid egg is also imported from Australia, New Zealand and
South Africa. Reports show that some of these egg products are found
to be infected with Salmonella or other food poisoning organisms; for
example Salmonella strain was isolated from 27% of 128 cases of Chinese
frozen egg mixtures examined in 1955 by the Central Public Health
Laboratories at Colindale. Outbreaks of paratyphoid fever were found
to be due to Salmonella paratyphoid-B, type 3A, in cakes filled with
imitation cream prepared in two bakeries in which unopened tins of
Chinese frozen whole-egg were found to be contaminated with the same
type 3A Salmonella paratyphoid-B. These outbreaks and the sampling
concerned took place outside Stepney.
All such products are examined at the ports of importation and the
Ministry of Health has held meetings with the medical officers of health
of the ports and riparian authorities concerned, including Stepney. The
Ministry has also conferred with representatives of the trade concerned
in the importation of these products.
These egg products have been extensively used for many years by the
bakery trade. The process of making fillings for cakes and meringues
