FOOD HYGIENE.
Regular inspection of all the premises in the Borough where food
is handled has been continued. During the year the following premises
have been added to the register.

As will be seen, the major increase is in the sale of ice-cream.
The manufacture of ice-cream within the borough is gradually
being reduced and the enforcement of the Ice Cream (Heat Treatment eta)
Regulations which require the provision of recording thermometers has
made the process too expensive unless a considerable quantity is made;
and the tendency is for the email trader to sell pre-packed ioe cream
made by the large manufacturers.
A number of the occupiers and owners of shops and public houses
have had their war damage dealt with and have taken this opportunity
to refit their shops. The officers of the department have been able
to advise and supervise these alterations in the interest of the good
hygienic handling of food.
The number of basement bakehouses in use has gradually been
reduced. The underground bakehouses in use have all been brought up
to the required standard with one exception, and this bakehouse will be
