slaughtered, and 6,195 were examined by the sanitary
inspectors after slaughter. Therefore 99 per cent. of
carcases were seen, this represents a very high figure
necessitating a very large amount of work being carried
out at night and on Sundays.
In addition to carcases examined in butchers' shops,
the inspectors also examined on the request of local
butchers 599 carcases coming from outside the district.
There is complete co-operation between the local
butchers and the Department-, and there have been
numerous instances where this co-operation has been
helpful to all concerned.
