BACTERIOLOGICAL EXAMINATION OF CREAM
Sixteen samples of fresh cream were examined and in four
cases, whilst no disease producing organisms were present, findings
indicated that quicker cooling and more care in handling
was required.
The processes of manufacture were followed through and
sampled at stages, and amendments suggested, which produced
satisfactory results.

BACTERIOLOGICAL EXAMINATIONS OF ICE CREAM

159 samples were taken, the results being as under:-

Of the total samples taken, 9 (5.6 per cent.) failed to
reach a satisfactory standard of bacterial purity.
In all cases after the results of sampling are known, the
vendors and/or manufacturers are made aware of the results, and
where the Gradings are 3 or 4, then a visit is made, methods of
service or manufacture are investigated, faults rectified and
further samples taken.
CHEMICAL EXAMINATIONS OF ICE CREAM
9 samples were taken from local manufacturers and were found
to comply with the standard.
FOOD AND DRUGS ACT, 1938
During the year 231 samples of milk and 278 other samples
were taken.
