BACTERIOLOGICAL EXAMINATIONS OF ICE CREAM.
197 Samples were taken, the results being as under:—

Out of a total of 107 samples taken 33 (16.75 per cent.) failed
to reach a satisfactory standard of bacterial purity.
In all cases after the results of sampling are known the
vendors and/or manufacturers are made aware of the results and
where the Gradings are 3 or 4, then a visit is made, methods of
service or manufacture are investigated, faults rectified and
further samples taken.
The coming to hand of plant for the efficient treatment of ice
cream in accord with the Ice Cream (Heat Treatment) Regulations
and the better understanding of such plant by manufacturers
and retailers is giving us an improvement in the bacterial purity.
The failures of all samples taken this year are 16.75 per cent, as
against 44 per cent, for 1947. There should be a further reduction
in the number of failures next year when most manufacturers
will have plant in full conformity with the Heat Treatment
Regulations. There is no chemical standard for ice cream.
