bakehouses. 35 of these bakehouses were not in use. 114 of the 153 were underground
bakehouses, of which 55 were factory bakehouses, and 28 not in use.
At the end of the year 381 restaurant kitchens were on the register.
Bakehouses and restaurant kitchens are supervised by the Factory and Workshop
Inspector, and further particulars in regard to them will be found on pages 50 ard 52.

( c)—SALE OF FOOD AND DRUGS ACTS.

800 samples have been taken under these Acts, of which 578 were formal and 222 informal. Of the formal, 552 proved to be genuine, and 26, or 4-5 per cent., adulterated, anc of the informal, 204 were genuine and 18, or 8*1 per cent, adulterated.
