The average water content of the 172 samples of Butter,
returned as genuine, amounted to 15.0 per cent., that in the 20
samples of Margarine being 14.5 per cent.
The average fat content of the 41 samples of Cream amounted
to 53.8 per cent., that in the nine samples of Tinned Cream being
22.25 per cent.

The average composition of the samples of Milk submitted during each month and returned as genuine is given below:—
