The average water content of the 210 samples of Butter
amounted to 14.5 per cen that in the 20 samples of Margarine
being 13.8 per cent.
The average fat content of the 66 samples of Cream amounted
to 58.6 per cent., that in the seven samples of Tinned Cream being
23 per cent.
Amongst the 66 samples of Cream four were submitted as
"Coffee Cream" or "Half-price Cream." The average fat content
of these samples amounted to 30 per cent.
The average composition of the Milks examined during each
month of the year and reported as genuine is given below:—
