The averages for the four quarters being:—

All samples of Butter submitted were examined for the
presence of preservative, with the result that 103, or 34.5 per
cent., were found to be free, with the exception of the presence
of common salt; 192, or 65.6 per cent., were found to contain a
Boron preservative in varying quantities, but in no case exceeding
the maximum permissible, namely, 0.5 per cent., calculated
as Crystallised Boric Acid; whilst three were returned as containing
an excess of this preservative.
On examination it was found that all the samples of Margarine
submitted contained a Boron preservative, in quantities ranging
from 0.22 per cent., to 0.43 per cent., expressed as Crystallised
Boric Acid.
As shown in the first set of Tables, 62 out of the 1,010 Informal
samples submitted were reported against, as follows—
Butter (4) One sample contained Margarine, whilst 3 contained
an excess of Boron preservative (as
mentioned above).
Cocoa (3) All were found to contain a trace of Arsenic.
Coffee (1) Contained Chicory.
Cream (9) All were preserved with Boric Acid.
Cream, preserved (1) Contained an excess of Boron preservative over
the limit of 0.4 per cent., calculated as
Crystallised Boric Acid.
Milk (3) Two samples contained extraneous water in
quantities amounting to 15 per cent., and
52 per cent., whilst one was deficient in
milk fat to the extent of 76 per cent.
Milk, dried (1) This sample was found to be slightly deficient
in milk fat.
