127 samples of milk and 14 of butter were procured in the
early morning and mid-day on Sundays during the year, nine of
which were reported against, this being a percentage of 7.08,
whereas the figures of the two preceding years was 13 or 8'7 per
cent, in 1905, and 11 or 13.6 per cent, in 1904.
The following Table shows the number of milk, butter, coffee
and other samples taken and submitted for analysis, and the
number and percentage of adulterations detected in each class.
It also shows the number of samples actually purchased by the
Inspector and his various deputies, together with the number
adulterated and the percentage in each case.

Of the total number of samples taken, 724 or 80 per cent,
were purchased by deputies. The Inspector nas had during the
year five females and three male assistants at his disposal, each of
whom appears to be a suitable type of person to be employed in
such work. In this respect the Inspector has been fortunate, for
it is a matter of experience that it is very difficult to find suitable
persons desirous of doing the work, and occasionally, although
