The above Table shows that I7.28 per cent, of the milk
samples and 4'4 per cent, of the butter samples were more or less
impure. This indicates a falling off in the case of the milk
samples, from io per cent, of impurity in the yeai 1902. In the
case of the butter there is, however, an improvement, the percentage
of impurity having fallen from 8'6 in 1902 to 4'4 in 1903.
