unwrapped carcases of meat and sides of bacon deposited on, or
dragged over, the floors of vans. The fact that meat is to be subjected
to cooking before consumption does not remove from the persons
responsible for its transport and distribution the duty of protecting
it from avoidable contamination at all times.
Clean food, free of dirt, foreign matter or bacteriological contamination
will be universally available only when food is regarded
and handled with the care due to it.
