INSPECTION AND SUPERVISION OF FOOD.

Milk.—The following are the registration and licensing figures for 1927: —

Thirty samples of milk from roundsmen have been taken by
the Chief Inspector and submitted to bacteriological examination.
Where the results were not satisfactory the milk vendor
was interviewed, and in every case methods were suggested and
agreed to for the better handing of the milk.
Meat.—Under the Public Health (Meat) Regulations, 1924,
notice of intention to slaughter has to be sent to the Town Hall
by all butchers who have slaughter-houses in Hornsey. In this
way the Inspectors are enabled to inspect the carcase and organs
of every animal killed in the Borough. The general standard of
meat sold in Hornsey is good. During the year the carcases of
2,374 sheep, of 144 beasts, of 21 pigs and of 16 calves were
inspected under the Regulations, and 997 lbs. of meat, 98 lbs. of
pork and 664 lbs. of offal were surrendered voluntarily on account
of some diseased condition. All diseased meat and offal are
destroyed in the Corporation incinerator. Two hundred and fiftyfour
lbs. of fish and 9 lbs. of walnuts were also condemned and
destroyed.
Swine fever.—An outbreak of swine fever was discovered
by the Veterinary Inspector among a batch of 22 pigs brought
into the Borough in December. All necessary steps were taken
and the animals were inspected by the Inspector of the Board
of Agriculture. Three of the affected pigs died.
Slaughter-houses.—The following is a statement regarding
the slaughter-houses in the Borough: —

Other foods.—Particular attention was given to all premises
where food is prepared or sold. During the year 727 visits of
inspection were paid to the various food premises in the Borough.
