the Metropolitan Cattle Market slaughterhouses, stating that blowing meat by means of the
mouth must not be done, although I think they, like us, have no statutory authority to
prohibit the practice, whether the potting of such bills without due authority might be
effectual in stopping the practice entirely is questionable, although doubtless it would be
helpful.

Shops, etc., Inspection of.—The number of shops, etc., where foodstuffs are disposed
of varies somewhat from time to time, but may be approximated as follows:—Shops dealing
in meat substances, butchers, provision dealers, etc., 240, meat and rabbit stalls 5, premises
where meat substances are prepared (sausage factories, etc.) 9, 104 fish shops, 4 fish stalls,
210 fruit shops and about 20 fruit stalls. To these 12,893 visits were paid during the year,
or, to be more correct, that number of separate observations were made; for while, of course,
it would be impossible to make an observation without a visit, very many observations are
included in a single visit to any particular marketing or business thoroughfare ; therefore,
for want of a better term, each separate observation has been called a visit.
The quality and soundness of foodstuffs generally, coming under the said observations
must be regarded as very satisfactory on the whole.
