E. Food Supply.
Bakehouses.—In anticipation of the coming into force on the
1st January, 1904, of the law that no underground bakehouse might
continue unless certified to be fit for the purpose, the Council, by a
Sub-committee of the Public Health Committee, visited every underground
bakehouse in the City. At the beginning of 1903 there were
107 bakehouses in the City, of which 97 were reckoned as underground
and 10 above ground; 3 of the latter were "factories." At the end of
the year there were 91 bakehouses, of which 79 were underground and
12 above ground (one of these being a factory). Appended is a list of
