EATING HOUSES, &c.
Much attention has been given during the past year to improving the
structural conditions of the kitchens and cooking rooms of places where
food is prepared for sale. In many instances hoods with ventilation
shafts have been fixed over the gas cooking ranges, the floors have been
covered with concrete, lead or some other impervious material, additional
means of ventilation have been provided, and the walls have been rendered
in cement. In some instances where the waterclosets were approached
directly from the cooking room or kitchen a proper lobby has been provided
in accordance with the By-laws, or the closets removed to proper
sites. As a result of the year's work the Eating Houses of the Borough
are in a very satisfactory condition.
