Milk.—275 samples of Milk were examined by the Public
Analyst, and of this number 12, or 4-3 per cent, were certified
as adulterated or below standard.

The average composition of the samples is set out in the following Table :—

The Public Health (Preservative etc., in Food) Regulations.
All the articles of food examined for the presence of
preservatives were found to conform to the requirements of the
Regulations with the exception of the ten samples of Sausages,
details of which are set out in the table of Adulterated Samples.
Proceedings were taken against the vendor of Sausage, Samples
Nos. 469 and 470; who was convicted and fined £2 and £1 Is.
costs.
In another case (Official Sample No. 480) the declaratory
label required by the regulations was not exhibited and the
Public Health Committee directed that a written caution be
given to the vendor. Similar warnings were issued in regard to
the informal samples where this requirement of the regulations
had been contravened.
