SECTION IV.—FOOD.
Dairies and Milkshops.—The premises registered for the
sale of milk numbered 141 at the beginning of the year. During
the year 19 new applications were granted, and 13 premises
removed from the register. The number in the register at the
end of the year was therefore 147; and during the year 330
inspections of these premises were made.
Cowsheds.—There are now only six licensed cowsheds
in the Borough, and 38 inspections of these were made during
the year.
Slaughter houses.—There are eight licensed slaughterhouses
in the Borough, and 216 inspections of these were made.

Restaurants. — The kitchens of restaurants and similar
premises are deemed "workplaces" and as such are registered
under the provisions of the Factory and Workshops Act. The
number on the register is 92 and 184 inspections were made
during the year.
Sale of Food and Drugs Acts.
During the year 504 samples were taken under the Sale
of Food and Drugs Acts and submitted to the Public Analyst.
Of the number, 436 were purchased officially in conformity with
the provisions of the Acts, and the remaining 68 were bought
informally as "test" samples. Thirteen, or 2.9 per cent. of
the official samples were certified by the Public Analyst as being
adulterated, or below the legal standard, compared with 1.3 per
cent. in the year 1923.
