Bye-Laws for the Protection of Food.
No prosecutions were taken during the period under review.
Registered Artificial Cream Premises.
(At present dealing in Synthetic Cream).
Number of visits—5.
Ice Cream.
Difficulty was experienced during the year in question in maintaining a
satisfactory standard of ice cream at certain manufacturing premises and one in
particular was the subject of a special investigation.
It is very necessary that premises where ice cream is manufactured, stored or
sold are kept under continued supervision, for it is evident that the personnel engaged
in the manufacture and distribution of this commodity must, in addition to cleaning
and sterilising the equipment used, maintain a high standard of personal hygiene.
The manufacture and sale of ice lollies appears to be increasing. After some
consideration it was decided to regard such ice lollies as coming within the definition
of water ices, and premises for their manufacture and sale are required to be
registered accordingly.

During the year 1,021 visits were paid to ice cream premises. The number of premises registered:—

Bacteriological Examination.
219 samples of ice-cream were sent for bacteriological examination. The
gradings of those submitted to the Methylene Blue Test were reported to be as
follows:—
Grade I 60
Grade II 55
Grade III 54
Grade IV 47
Total 216
(Methylene blue test gradings in Grades I, and II are considered
satisfactory products, Grades III and IV unsatisfactory.)
Of the remaining 3 samples, one was found to be unsatisfactory.
In addition 20 samples of Ice Lollies examined bacteriologically were reported
to be satisfactory.
Chemical Examination.
81 samples of ice cream were submitted for chemical analysis and none was found
to be unsatisfactory. 80 of these samples were taken solely for the purpose of
ascertaining fat content, as requested by the Ministry of Food (Circular MF.3/49
of 1st April, 1949), to whom returns of analyses were made.
