disease. Approximately 7,000 carcases remain to be examined in
the Cold Air Store at the end of the year.
A systematic examination of imported carcases of mutton and
lamb was carried out at the Cold Air Stores for caseous lymphadenitis,
and 216 carcases were found to be diseased.
Sixty-seven certificates for the export of meat extracts were
issued during the year mostly for U.S.A., Australia, South America,
Egypt and the Phillipine Islands.
A total of 2,751 visits were made to the retail butchers shops
and stalls in the Borough.
Bakehouses.
There were 21 bakehouses in use at the end of the year, and
of these 16 were basement premises. Machinery is used in all of
them. 71 inspections were made during the year.
Underground Bakehouses.
It was suggested to the Health Committee in the early part of
the year that although consideration of the certificates in relation to
underground bakehouses would not fall due until 1954, it would
only be fair to give some indication in the interim to the Owners of
a possible or probable revocation.
The Owners obviously being unwilling to spend large sums of
money in reconditioning and improving premises without a reasonable
guarantee that the certificates would not be revoked.
In accordance with the authority of the Health Committee, I
personally inspected all the underground bakehouses in the Borough
and reported as follows:—
In 14 instances without making any formal statement which
would bind the Council, I gave reasonable assurance that I would
recommend that the certificates in relation to the underground
bakehouse be not revoked when it falls to be again considered in 1954
and that in these circumstances I urge and require that improvements
be effected from time to time and that every possible effort be made
to maintain the best hygienic conditions possible in the bakehouse,
