" I have pleasure in furnishing the following particulars summarising
the composition of the milk samples submitted for analysis during the
year 1955.
" Sixty samples of milk were submitted during the year, all of which
were taken informally. None were found to be " adulterated but
three samples contained less than the legal minimum of 8.5 per cent of
milk-solids other than milk-fat. These samples were, however, submitted
during February, when the seasonal decline in quality usually
becomes apparent, and as the freezing points were found to be within
normal limits the milks were regarded as ' genuine '.
" The average composition of all milk samples analysed is shown in the
following Table, with the average of previous years for comparison.

" As may be seen, the averages show very little variation since the end of
the War, due no doubt to the Metropolitan supply being composed
almost entirely of bulked milk".
