Ice-Cream.
Thirty-three samples of ice-cream were taken during the year,
eac h sample being submitted to the methylene blue test.

The samples were, as a result of the test, placed in the following grades:-

Provisional Grade 125
„ „ 25
„ „ 32
„ „ 41

Where samples of ice-cream made at premises in the Borough
receive unsatisfactory reports, the premises, plant, and methods of
operation are examined, and, where possible, improvements are
su ggested.
Lollies.
A sample of a cream-type lolly submitted for bacteriological
examination was found to contain the presence of faecal coli. As there
as n o apparent source of infection from the shop where the sample
was, taken, I reported the matter to the Medical Officer of Health
of the Borough where the lollies were manufactured.
th e reply I received was to the effect that the factory concerned
was Ins P ecte d at regular intervals by the sanitary inspector, and that
the method of manufacture, and the premises, were entirely satisfactory.
Samples of lollies taken over a long period have shown a
consistent degree of purity.
Further samples of lollies taken from the shop have proved
satisfactory, and further action was, therefore, not resorted to.
Milk supplied in Schools and Hospitals.
Samples of milk in course of delivery to Schools and Hospitals
in the Borou g h are regularly taken, both for chemical analysis and
for submission to the prescribed tests for such milk. The samples
are included in the general totals given on pages 31, 32 and 34.
The results of the analyses and tests are communicated to the London
country council or to the appropriate Hospital Management Committee.
