Milk.
Of the 721 whole milk samples, 25, or 3.4 per cent. were certified
as adulterated. Eight samples were reported against as being
deficient in milk fat, 14 as containing extraneous water, 2 as being
deficient in milk fat and containing extraneous water, and 1 as
containing preservative.

The average composition of the 696 samples reported as genuine proved to be as under:—
