The percentage of adulterated samples of milk was higher
than in 1909, 12.2 per cent, being certified as below the
standard of the Board of Agriculture, compared with 8.4 per
cent, in that year; but in 17 of the 36 milks certified as
adulterated the deficiency in fat or the excess of water did
not exceed 4 per cent.
The average composition of the 277 samples purchased as
new milk was:—
Solids other than fat 8.67
Fat 3.52
Water 87.81
Milk Warranties.
In April last summonses were issued against two vendors
for having sold milk from which 16 per cent. of the original
fat had been abstracted, which were dismissed in each case
on the ground that the milk had been purchased with a
p
