Sunday Milks.—Of the 196 samples, 26, or 13•3 per cent., were found to be
sophisticated. The analyses of these milks showed that they contained the
undermentioned parts
Official Standard.
Fat 3•62 per cent. as against 3•0 per cent.
Solids not Fat 8•64 „ ,, 8•5 „
Total Solids 12•26 „ „ 11•5 „
Here we see in these milks that, although 13•3 per cent. of the samples had
been interfered with, they contained 20•6 per cent. more fat than the "standard"
laid down by Somerset House, while the "solids not fat" were 1•6 per cent,
higher than the figures of the official analysts.
Week Day Milks.—These 224 milks, like those taken on Sundays, were
purchased from the vendors on their rounds, or were bought in milk-shops. 30, or
13•4 per cent., were adulterated. Notwithstanding this fact, the analyses showed
that their average composition was higher than the official standard.

Railway Station Milks.—121 samples were procured and of these not one was
adulterated. Their analyses showed a very high standard of quality, compared
with which the official standard is absurd, and has recently been fixed on, much
to the surprise of all chemists and authorities, as the official standard of the Board
of Agriculture.

Only a short time since a "Departmental Committee" appointed by the Board
of Agriculture reported that milk should be looked on as sophisticated which contained
less than 3•25 per cent, of fat, 8•5 per cent, of solids not fat, and 12•0 per
cent, of total solids, but their recommendations have evidently been shelved. It
will be noticed that the analyses of all the Railway Station Milks, presumably
coming direct from the farmers, gave higher figures than those proposed by the
Committee, and go a long way to prove that their proposal was fair to the farmer
and a protection to the public.
