BUTTER.
Of the 149 samples submitted, 15 or 10 per cent. were
adulterated. More than half the adulterated samples were submitted
during the first quarter.

Prosecutions were successfully instituted in each of the
adulteration cases.
The Sale of Butter Regulations issued by the Board of
Agriculture provide that where the proportion of water in a
sample of butter exceeds 16 per cent. it shall be presumed for
the purposes of the Sale of Food and Drugs Acts, 1875 to 1899
