It is satisfactory to find that the adulteration of milk has decreased in
Islington, although, considering that the great bulk of the milk as it arrives
from the farmer is pure, it is not altogether pleasant to find that even in 1907,
the year under consideration, the adulteration represented 6.7 per cent. of the
samples examined, although it contrasts favourably with 11.8 percent. in 1906.
During the last sixteen years 7,751 samples of milk have been exmined, of which
830 were adulterated, or 10.7 per cent. In these years the percentage has
varied from 18.7 in 1892 to 6.7 in 1907.
The full particulars for each year are again given, as they are undoubtedly
the most important of those connected with the adulteration of food.

The Quality of the Milk Sold.- —Generally speaking the average
quality of the milk sold in Islington is good, because their analyses shows
that whether they were purchased on weekdays or on Sundays they (inclusive
of the adulterated samples) contained considerably more fat than the official
minimum requirement, for in the former case it has averaged during the last
ten years 3.64 per cent., or 21.3 per cent. more than the permanent minimum,
and in the latter case 3.63 per cent., or 21.6 per cent. above it.

Milk, which is of course the chief dairy product, was examined in 597 instances, with the result that 40, or 6.7 per cent., were found to be adulterated with water or deprived of their fat.
