Inspectors.
Thirteen of these milks have been analyzed in
duplicate, so that really forty-eight analyses have
been made of milk alone. Even when the chief
constituents are only estimated, it is sometimes
necessary to examine into the cause of the high
specific gravity, and this involves additional work
beyond that which was first expected.
Two samples of Cacao have exhibited the extent
to which a mixture can be brought. One of them
did not contain more than 20 per cent, of Cacao;
and the other differed very little. Cheapness does
not make up for quality, as Arrowroot and Sugar
cannot compensate for the nutritive part of genuine
Cacao.
Two samples of Coffee were both good, and left
nothing to be desired.
Six Breads and Three Lards were, as far as the
Act is concerned, of the nature and quality demanded.
One of the Breads was, however, very insufficiently
fermented. A point, to which I called attention
more than five years since, viz., deficiency of salt, is
now no longer observable.
