sugar and starch. If the Public were well advised
they would add these articles themselves.
Four Lards, four Mustards, and eight Peppers
conclude the list. The Lards were good. The
mustards were not adulterated, but, in three cases,
feeble from the absence of black mustard. One of the
Peppers (136) contained 6½ per cent, of sand. It was
very strong. I could not recommend a prosecution,
as it was probably accidental.
The certificates are all in the hands of the

Inspectors.

During the Spring Quarter just passed, I have
analyzed thirty-five samples of Milk, and I am sorry
to say that there is a considerable amount of
adulteration. It should be mentioned that many of
these were afternoon-milks, and they consequently
represent a branch of work that has not been hitherto,
to any extent, undertaken No fewer than seventeen
were more or less admixed with water, or say 48 per
cent. One of these milks contained 50 per cent, of
water, and was taken from a customer in order to
ascertain the character of the article sold, inasmuch
