The Port was very new and very sweet; it
contained no less than seven per cent, of sugar, but
consisting entirely of gluecose. Of proof-spirit I
found 34.35 per cent., and this was excellent quality.
The colouring matter was quite genuine, as I have
always been careful to ascertain in all the red wines
which I have examined. Except as to newness, I
should call this wine, No. 129, very good.
Sherry (No. 162) was somewhat more acid than
usual. It was plastered as is almost always the case
but not to any extent to call for further remark.
Of Spirits I have analyzed three; three Gins
and three Whiskies.
The difference in alcoholic strength is remarkable.
In Gins:—
Per cent.
No. 163 contains 60.49 Proof spirit
No. 130 „ 72.77 „ „
No. 139 „76.00 „ „
None of the Whiskies were as strong as No. 139,
but even in these the difference is considerable,
varying from 64 to 74 per cent.
The Spirit of Wine in all of them was of good
