three varieties— a Sugar, a Coffee, and a Jam.
These were all good of their kind The Raspberry
Jam was particularly well made— clean, and free
! from copper.
Of Condiments I have examined two. Both
I Pickles were of excellent quality, made of tender
vegetables, of good Vinegar, quite free from Sulphuric
Acid, with no trace of Copper or Lead. They
were everything that could be desired.
And now as to cordials. At the suggestion of
one of your Committee, and for the protection of
children, a sample of Aniseed was examined. It
was, as it should be, almost free from Alcohol, and
only contained just enough to keep the Essential Oil
of Aniseed in clear solution. It was free from
metallic impurities, and proved to be a very creditable
preparation.
Some Shrub was also examined and calls for
little remark. The proof-spirit in it amounted to
nearly 22 per cent, and was of remarkably good
quality.
Of wines, I have analyzed two varieties, one
Port and one Sherry.
