Notes in regard to samples shown as adulterated or below standard.
Self-raising flour.—The deficiencies in these samples were in regard
to the yield of carbon-dioxide which, at the time of taking the samples,
was prescribed by the Food Standards (Self-raising flour) Order, 1944, to
be not less than 0.45 per cent. The two formal samples yielded 0.35 and
0.40 per cent. respectively. The vendors were written to in each ease.
N.B.—The minimum has since been lowered to 0.40 per cent.
In December a letter was circulated to all shopkeepers selling selfraising
flour drawing attention to these deficiencies.
