Cautionary Letters. On the instructions of the Public Health
Committee, cautionary letters were sent in respect of the following
contraventions :-
Sterilised milk containing 2.3% added water.
Absence of hot water supply for washing-up at a
soft drinks stall.
Milk Samples.
Milk samples taken and submitted for chemical analysis during the
year numbered 74, including seven taken at hospitals, schools and day
nurseries in the Borough.

The average fat and solids-not-fat content of milk samples analysed were as follows:-

Poultry Stall.
Fines of £20 and costs of £2 were imposed by the Court on the
proprietor of a stall from which poultry was sold, for contraventions
of the Food Hygiene Regulations and for which four summonses were
issued.
Public Health (Imported Food) Regulations. 1937-48.
241 Detention Notices and 424 Release Notices were served under
the Regulations. These affected a variety of foodstuffs including
cocoa, coffee, cinnamon, dried fruits, egg powder, ginger, gum arabic,
horsemeat, assorted meats, mushrooms, nutmegs, offals, rabbits, sugar
and tea.
Consignments of frozen meats, offals, etc. which arrived unaccompanied
by the official certificates, were either re-exported or subsequently
released on production of the certificates. 299 carcases
of mutton, representing a 5 per cent examination, were examined for
caseous lymphadenitis by the cutting of the lymphatic nodes. All the
carcases examined were found to be free from the disease.
Unsound Food.
The following quantities of unsound foodstuffs were disposed of
during the year under the Public Health (Imported Food) Regulations,
1937-48, and the Public Health (London) Act, 1936 :-
