It is pleasant to record that fewer poor quality Australian sheep carcases have been
seen on the market during this year, but there can still be seen a percentage of inferior
quality carcases amongst good quality carcases, which leads us to believe that some
breeders pay more attention to “breeding for wool” than “breeding for mutton."
The handling of carcases en route appears far from satisfactory judging by the
condition of some of the carcases exposed for sale on the market.
Leadenhall Market and City Shops.
As the two additional Inspectors have had their duties confined to Aldgate Market
and Slaughterhouses, we have been able to give more attention to Leadenhall Market
and City Shops, with good results.
The following record shows the variety of knowledge required by the City
Inspectors, and the figures for this year show the result of careful and systematic
inspection, viz., an increase of nearly twentyfive tons of unsound food destroyed.
