FOOD ADULTERATION.
The number of samples submitted to the Public Analyst during the year was 600, the same
as in 1910, the number found adulterated being 50, or 4 fewer than in the previous year.
The percentages of adulterated samples in each of the last five years have been, in
1906. 1907. 1908. 1909. 1910. 1911.

The list of samples taken is given in Table 51. Of the 341 samples of milk 110 were taken
at the Paddington Terminus in course of transit, under contract, at the request of the consignees.
Such request being based on previous dissatisfaction (for one or another reason) with the milk
delivered, it is not surprising to find that 21 (19T per cent.) of the samples were found to be
