foods One provision dealer having a stall in the Metropolitan Cattle Market was
summoned under the Public Health (Meat) Regulations for undue exposure of his
goods to dust and filth. Two summonses were issued for offences at different
periods of the same day. Quite evidently the offender, having been caught once,
did not expect the Inspector to return shortly afterwards. This shows the need
of fairly constant supervision. A tinned food, etc., dealer who had been previously
warned against bringing doubtful job stocks to the market not properly sorted to
eliminate the unsound tins, was prosecuted and fined £20 and £5 costs for
depositing at the Cattle Market unsound tins of fruit.
Offensive Trades include 4 tripe dressers, 4 gut scrapers, 4 fur skin
dressers, and Knackers' Yard, which received a total of 50 visits. There was no
cause for complaint in the conduct of the business carried on in them.

Restaurant Kitchens.—The work of inspecting restaurant kitchens is
tabulated under Workshops. This work is done by the two women inspectors,
whose work was reviewed fully in the Report of 1920, p. 58.
The following is a tabulated statement of the premises examined, and the results. In each case the unsatisfactory conditions were remedied without having to resort to prosecution.
